6.5% ABV, Wheat and barley combine in equal proportions as the base malt; Japanese candy sugar contributes five percent of the fermentables. At the end of the wort boiling, a mixture of freshly peeled and crushed Japanese natsumikans (tangerines) from both Shizuoka and Fukuoka are added to the kettle. The natsumikans from Shizuoka are quite large, grapefruit-like with a similar tart and sour character. The Fukuoka mikans on the other hand, are smaller, sweeter and more orange-like in character. BAIRD CARPENTER's MIKAN 633ml
The mikans used in this brew are fresh, succulent, and local -- harvested on the Heda land and by the hand of our carpenter friend, Nagakura-san. The Baird brewers hand-process the harvested mikans, shaving off the outer skin of the peel and pressing the juice. Both peel shavings and juice are added to the brew at different stages of production. The mikans serve to add depth and complexity to an already sumptious ale; their role is to complement, not dominate. In addition to mikans, the 2009 Carpenter’s Mikan Ale incorporates a grain bill including Maris Otter pale ale malt, wheat malt, unmalted wheat and two types of Japanese sugar (sudakito and akato). The hopping schedule features cirtrusy Centennial and Cascade varieties including dry-hop additions to the conditioning tank. The combination of mikans and citrus hops provide an exquisitely complex yet balanced fruit character. The wonderful aromatics of this character waft gorgeously from the billowy white head that forms in the glass. 7% ABV, Saisons have been around for ages. Traditionally brewed by Belgian and French farmers to provide refreshment during harvest. This is a very modern, you might say new world, interpretation of this style. Based on the tradition we have used a French Saison yeast, which provides a plethora of funky, earthy, very “Belgian” flavours. From there they have upped the ante a fair bit by doubling the amount of malt, and thereby the alcohol, and loaded the kettle with punchy Nelson Sauvin hops, imparting a wonderful bitter grapefruit aroma. 8% ABV, There are seven true trappist breweries left in the world, and only six in Belgium. The history of the brewery goes back to 1648, when Dutch monks built a chapel in Achel. The first beer to be brewed on the site was the Patersvaatje in 1852, and 19 years later in 1871, the site became a Trappist monastery, with beer brewing a regular activity. This trappist brown ale stays true to the long monastic brewing tradition with its slightly sour, oaky, and raisiny palate. The presence of acid makes this a wonderful pairing for food. 5.8% ABV, The original porter! Or at least a recreation of the original recipe. Beer historian, and respected blogger, Ron Pattinson collaborated Menno Olivier on this historic treat. It's a taste of what the "original porter", brewed by London's Whitbread Brewery, would be like without having to travel back to pre-WWI days. Whitbread was known to be one of the largest producers of porters during this time and brewed their original porter on August 1, 1914, only a few weeks before the outbreak of World War I.

10.9% ABV, Calvados is an apple Brandy distilled from dry cider and aged in oak. The aroma has a roasted coffee and caramelized grain appeal to it, with a fruity addition to the nose. While coming across with some heat the dry woody notes lifted a gentle apple-like scent from the glass. Together the malts, coffee, alcohol, and oak strip your palate of any moisture. Hints of apple appear mid-sip and in the aftertaste, but for the most part the alcohol seems to have boosted the coffee and malts to a new level. The mouth feel is thicker than the original Weasel.
